These cookies were AWESOME. It totally fulfilled my chocolate craving and it was easy to make. I had all the ingredients already and it didn’t require egg at all. That made me eat a lot of the batter…yum….batter..
My housemates loved them. They were gone after a day.. or maybe two. Even the one who doesn’t like too much chocolate!
Now the recipe called for cranberries and I didn’t want cranberries. So no cranberries. But if you look at the link, you’ll get cranberries. cranberries cranberries cranberries.
I took two recipes and mixed them together since I had some strawberries left over (wayyy to bitter) and I was interested in making this: Vampire Cookies.
Obviously it’s not halloween anymore so they turned into heart cookies!
For the insides, I used this recipe: Strawberry Curd. I didn’t have any lime or cornstarch so I just use an egg instead.
Now, the problems I’ve had with the cookie dough is that it was WAY TOO SOFT to roll. I had to keep it in the fridge for a couple of hours and make only a few at a time or else the cookie dough would stick to
EVERYTHING.
Another issue is that I couldn’t mix the strawberry enough to turn into a jam-lookin’ slush. But it still worked out well and it was really delicious. The ‘curd’ kept the cookie soft in the middle but crunchy at
the edge.
By the way, I really just gotta say that the butter cookie recipe is AWESOME. Butter makes everything yummmay.
